Garlicky Broccoli & Green Beans, Mashed Cauliflower, Baked Beans and Spinach

I didn’t get to buy the missing ingredients for Lasagna today so I had an all veggie meal instead. It was delish!

This is the first time I had baked beans.
I will surely make these on a regular basis from now on, they taste so good! I added an onion and a fresh tomato.

Mmm. Lasagna or not, your dinner looks amazing. So packed with veggies! I’ve never tried baked beans before. I wasn’t quite sure what they were until I saw a can at the store a few weeks ago. Yours look way better though, way way way better! You’re making me crave green beans! They’re so good!

I saw your question on my blog about using cashew butter in VeggieGirl’s cookies. I have a really dry cashew butter that’s not roasted that I know would not work well in the cookies, but if you have creamy, roasted cashew butter – the kind you have to stir in the jar – it would work fine. I think cashews are the best and most flavorful when they’re roasted!

Romina – I bought a can of baked beans in some plain tomato sauce so I pimped the sauce a little ;)

Courtney – I just added an onion and a fresh tomato to the beans who came in a jar in some tomato juice so sadly I don’t have a recipe.

I grew up on baked beans, mostly on toast. The new layout is cool and your pictures are, as always, awesome.
