Lemon Corn Pancakes

Yumm, these were good! Inspired by the Lemon Corn Waffles from VwaV I came up with the following.
Topped with black currant jelly and blueberry jam this was a fluffy yet crunchy and very fruity breakfast!

Ingredients (yields 3 pancakes)

4 Tbsp. whole wheat flour
1 Tbsp. corn meal
1/2 tsp. baking powder
pinch salt
1 Tbsp. apple sauce
2-4 Tbsp. water
1/4 cup + 1 Tbsp. soy milk
juice and zest from 1/2 lemon (or 1 lemon, depends on how lemony you like it)
1 Tbsp. agave syrup

You’re giving Ruby Red a run for her money on being the breakfast queen!

I wish I had that for breakfast tomorrow… How come I only have time to dip 3 cookies in a coffee?
Would you send me a couple of them? :-)

Delicious!!! Great work Lizzy!! =) You should change your blog’s name from „Trying Veganism“ to „Rocking Veganism“, hehe.

Oh yummy… That definitely looks so much better than the bowl of cereals I had :P

MMmmmmmmm! I love that you topped them with currant jam, such a good idea. Yum! Fruit! ;-)

Hey, Ruby Red is definitely loving the individual serving-size pancake recipe! Thanks for doin’ the work for me! The Blueberry Corn Pancakes from V-con are something I also highly recommend, but I’m not sure if you’ve tried those already. Mmmm… But someone stole the non-stick pan from my dorm kitchen, so I don’t think I’ll be able to make pancakes for a while :(

Okay, those pancakes smothered in the black-currant and blueberry jams look so scrumptious, it’s killing me, haha. YUM!

Katie – Ha ha, that made me blush! But I doubt anyone can top her breakfast creations – I wish I could =p

Alice – I never have breakfasts like this during the week, but I looove pancakes on weekends =)
Try making the batter at sunday night and make them in the morning. It shouldn’t take more than 10 minutes max. if you have a pan big enough to fit in 3 pancakes. Do them while you’re making coffe, that could work =)

Romina – Now that’s an awesome name, he he I’ll keep it in mind ;)
And thank you!!

Jody – *wraps up pancakes and sends them off* Oh no wait, the postmen will eat them. You’ll have to come visit me ;)

Jennifer – I loooooove currant jam, so good =D

Ruby – I think I got the measurements from one of your one-person-pancake-recipes so I must thank you ;)
Mhhh, I’ll get this cookbook for my birthday in a month so I guess I know what I’ll make first!
Aww, hopefully it’ll appear again soon. I love my non-stick pan, especially for pancakes!

Veggie Girl – Believe me, I wish I had some too now. You’re not suffering alone, ha ha ;)
